Sake (kijoshu)
This kijoshu was brewed by Kamogawa, a member organization of the Kijoshu Association located in Yamagata
prefecture’s Shirakatamachi, over a three-year period starting in 1972. Records of this kijoshu are listed in a
production report submitted to the tax agency for the local municipality to manage records of sake production.
In the past, Kamogawa experimented with small-batch production (no longer sold). Thereafter, following advice
received from a former head of the National Tax Agency Brewing Testing Laboratory, the brewer researched the ideal
maturing locations and temperatures, and Yamagata prefecture’s Kamogawa group has been storing this kijoshu in
the ideal conditions ever since.
